Mayonnaise Dinner Rolls

Yeast is pretty hard to come by at the moment. If you find yourself in a no yeast pickle, try this inventive recipe to make about five fluffy dinner rolls using mayonnaise!  Ingredients:
  • 1 cup cake wheat flour 
  • 1 tsp baking powder 
  • 1 tsp salt
  • ½ cup milk
  • 2 tbsp full fat mayonnaise 
Method:
  1. Combine all ingredients in a mixing bowl.
  2.  Spoon the mixture into a greased muffin pan.
  3. Cook in a preheated oven at 180°C for 15 minutes or until golden brown. 

Yoghurt Flatbread

Bread really is the ultimate comfort food isn’t it? If you’re craving after a really soul-warming type of bread then here is the recipe for you. Flatbread pairs well with anything from curries to spicy lamb chops, so make as much of it as you can while under lockdown! (Don’t worry, no one will judge you for putting on a few extra kilos.) Ingredients:
  • 2 cups cake flour 
  • 2 cups plain or Greek yoghurt 
  • ½ tsp baking powder or bicarbonate of soda (either will help make the bread soft and light)
  • ⅔ tsp salt 
  • Olive or vegetable oil to fry 
Method:
  1. In a large bowl, add the flour, yoghurt, salt and bicarbonate of soda/ baking powder. 
  2. Use your hands to gently form a dough, which will be sticky at this point. Then cover the dough with cling film, and leave to rest for 20 minutes.
  3. Divide the dough into 6 balls, and dust each ball generously with flour.
  4. Use a rolling pin to roll out each ball to approximately 3 cm thick. 
  5. Heat up a non-stick frying pan, add about a half a teaspoon of oil, then cook the flatbreads on each side for about 2 minutes, or until cooked.
  6. Serve hot or cold.

Irish Soda Bread

No yeast, no proving time, no kneading. What more could you ask of a bread recipe? This Irish soda bread is as addictive as it is simple to make. You may never buy grocery store bread again once you’ve aced this!  Ingredients:
  • 250 g plain white flour
  • 250 g plain wholemeal flour
  • 1 tsp salt
  • 1 tsp bicarbonate of soda
  • 400 ml buttermilk
Method:
  1. Preheat the oven to 200°C.
  2. In a large bowl, add the white and wholemeal flour, bicarbonate of soda, salt and mix gently with the tips of your fingers.
  3. Make a well in the middle and add about 1 and a half cups of buttermilk, if you feel it needs some more, add the other half too.
  4. Mix quickly to form a soft, sticky dough, then turn it onto a lightly-floured surface and knead briefly, just enough for the dough to hold together and be shaped into a ball.
  5. Flour a large baking tray, place the bread on it, then use a sharp knife to cut a cross on the top. Spread some flour over it, then bake for about 30-35 minutes or until golden brown and the bottom of the bread sounds hollow when tapped.
  6. Allow it to cool on a wire rack.
  7. Slather with butter and enjoy!
