For the longest time, we have been fans of Paulo Santo. We followed his culinary journey at Gemelli in Bryanston and when we found out in December 2019 that he will be steering a new restaurant at The Leonardo in Sandton as MD and senior partner, we were over the moon with excitement. AURUM Restaurant, the golden destination of the Sandton food-scene, has grown into a prime fine-dining destination since opening its doors during Q1 2020. As we enter the final quarter of this year, AURUM Restaurant is proud to announce the launch of its new seasonal menu. This carte du jour will focus on all things fresh, and champion each element in its simplicity.

Speaking about the new menu, Paulo says the team has moved away from the hero-ingredient philosophy and instead, worked towards exalting all the ingredients on the plate. Our new menu will not just honour a well-marbled piece of meat or a fresh fillet of fish, but through technique and careful manipulation, we have strived to hero all the accompaniments that bring the dish to life. We want our patrons to enjoy a unique and exciting experience with every bite,” says Paulo.  

The Taste Of Summer

Some of the key dishes to look forward to include a beetroot starter with the superb use of artisanal Stracciatella cheese, Prawn Risotto, wonderfully light yet full of flavour, and the Ricotta Gnocchi, a bowl filled with timeless deliciousness. Lastly, for dessert, the star of the show is the new AURUM “Magnum” Ice Cream, pretty as a picture, and pure indulgence in the form of a frozen caramel mousse, hazelnuts and dark chocolate. Changing the menu seasonally is a chance for our chefs to deliver new expression and for us to progress as a restaurant. It also allows for our team to develop, and for us to deliver new knockout showpieces for our patrons to indulge in,” says Paulo.

AURUM’s food is inspired by contemporary European cuisine and delivered with a South African touch. Dishes are restrained and simplicity is key in order to showcase the very best of local producers, farmers and artisans. Care is always taken to consider the coming months from a sustainability perspective and to strike a balance with food trends and guest expectations.

Sotto Sopra takes over the expansive Atrium of the Trumpet Building on Keyes Avenue. This artist and foodie hub buzzes over weekends and on the first Thursday of the month, as cosmopolitans from all around Jozi descend on Rosebank's newest art precinct. Situated right next to the magnificent Circa building, Sotto Sopra is likely to become a regular after-work drinks spot and romantic date destination.

The design of the restaurant reflects its artsy surrounds - with pop-arty abstract influences in the furniture and mural features. Downstairs at Sotto, the furnishings are funky and even a little kitsch (but in the best way possible). Cylindrical shapes and vibrant pops of colour dominant the space, giving it an overall look of art come to life. The upstairs venue is slightly more sophisticated. With a trendy floor-to-ceiling plant wall and cosy seating behind glass doors, Sopra offers its patrons a luxurious dining experience overlooking the bustling street below.

The bottom level, Sotto, offers guests a traditional Italian trattoria experience – serving thin-based Roman-style pizza and handmade pasta in a flamboyant, open and relaxing dining area. The menu for Sotto was finalised with the restaurant's official opening in February 2020, serving a range of stuzzichini (bar snacks), antipasti, mains, secondi and desserts to tantalise your tastebuds. Using only the freshest Italian ingredients, the culinary team have designed a menu that reflects the simplicity of Italian cuisine, while still playing to our unique South African palates.

There are also a number of vegetarian options available on the menu, including salted vegetable crisps, zucchini fritti, Melanzane alla Parmigiana (oven baked aubergine with pomodori, basil pesto, mozzarella and Parmesan) and Pumpkin Pizza (roasted pumpkin, feta, sage and chilli, topped with pumpkin seeds and wild rocket).

At Sopra, there is an a la carte menu offering of antipasti, primi, secondi and dolci. Very soon, the restaurant will also be introducing its six and nine course degustation menus with wine pairings. The restaurant comfortably seats 80 patrons and feels completely separate from the trattoria below. New date night destination anyone?

The Food

I have one thing to say about the food, lovely. They have chefs that are always at work ready to serve up something delicious and heart warming.

Its always refreshing to see diversity on a menu, with foods like chicken fillet stuffed with feta, herbs and caramelised pistachio to a good succulent prime rib - what more can you ask for. I have to say though, I am not a salad type of girl but I surely loved their chicken salad (I was hooked and sold at avocado and honey and mustard dressing). Their apple crumble is to die for!

The Bar

Right when you think that was the end of it, downstairs sits their bar. This spot is also great and also has a certain area where you can sit outside and enjoy the fresh breeze and futuristic buildings that Sandton has to offer.

The drinks menu is also filled with options. They sometimes have amazing events hosted here. The most recent that I attended was the "Shades of Autumn" by the BailaAfrika team, this is a Kizomba/Cuban Salsa social where you get to dance the night away. This is a spontaneous event that brings all the dance and Afro Latin culture lovers out to have a good time.

Bias: I love Afro Latin culture, so rich with commonality with the African culture so I can vouch for it - something worth trying.

It's A Carpe Diem...

Lastly, I will encourage you to really consider checking out this spot, it is worth it. The food is marvelous, the vibe - warming and well its just a breath of fresh air.

There Are No Wrong Choices At Les Delices de France

The menu might be in French (with English subtitles) but the waiters are more than knowledgeable and can guide you in the right direction. The concept behind this eatery is to introduce classical French cuisine to Johannesburg. Patrons can expect a fusion between haute cuisine and contemporary indulgence – the reason why American Express gavethe restaurant a platinum fine dining award in 2017. When it comes to ordering à la carte, the duck carpaccio with apricot, sesame seeds, olive oil, honey and walnut comes highly recommended.  Mains is divided between meat and fish with no wrong choices in between. If the tender rabbit braised in red wine and mushrooms served with spaëtzle noodles is not your cup then we recommend keeping it authentic with an oven-roasted beef fillet drenched in rich and creamy béarnaise sauce. The somewhat bland-looking Dunkeld West Shopping Centre seems an unlikely spot to find a fine dining restaurant like DW Eleven - 13. The practical and functional building doesn't initially strike you as the setting for a candlelit dinner. But this is Joburg, after all, and defying expectation is what we do! As my date and I walked up to the restaurant, we were confronted by a large black door. We stood in front of it and, like something out of Narnia, the door opened. So, into Narnia we stepped. Or at least the foodie version.

Decor

If you're looking for an African Narnia, this might be it. The simple decor, in the calming earthy tones of beige and olive, lends a delicate African elegance. The unpolished wooden tables are bare and set with only the essentials, so as to accentuate the beautiful food presentation. A candle stands on each table, casting shadows on a vase containing a single, magnificent St Joseph's lily. Everything is elegant and tasteful, representing the ethos of DW Eleven — 13. As we took our seats on the comfortable leather chairs, I noticed the soft lighting. Hanging around the ceiling lights are elaborate wire baobab trees. Certainly, this is Joburg's unique stamp on fine dining — baobab chandeliers.

Food

Let's move on to the mouthwatering part: the food. We chose the four-course option, which became five courses with the superb complimentary starter: a cucumber jelly with buttermilk and toasted pumpkin seeds to cleanse the palate. It sounds unusual, but the crunchy-sour-freshness did the trick. Our waitress then brought us a bread basket. Let's pause here for a second. If you don't consider yourself to be a bread person, set aside all your preconceived ideas! DW Eleven — 13 gives bread a whole new meaning. We had the crispiest chickpea churros and delicious herb focaccia served with… wait for it… salted caramel butter. I really could have eaten the salty-sweet creaminess with that bread all night. There, I've admitted it. It may sound super uncultured of me, but you haven't met this bread! There is nothing uncultured about it. Okay, okay, I'll stop now.

Before I give you the account of the actual menu, you must know something about this restaurant. It's not the kind of place where you ask for the salt or, worse, the tomato sauce. Every dish has perfect combinations and creates its own balance. The art of cuisine is taken seriously by owner and head chef Marthinus Ferreira. So, be prepared to tuck into art in the form of food.

Our starters arrived: chilled almond soup served with prosciutto, frozen grapes and drizzled with prosciutto-infused olive oil. It looked like an ocean scene with a coral-scattered beach. Clearly, the presentation is done with heart.

I was then served a dish with artichokes, porcini mushrooms, dehydrated rocket, pine nuts and Parmesan. I wish I could try this dish at home, but alas, I'm not Chef Marthinus Ferreira. Restaurant food should always leave you with the feeling that it was worth dining out. There are few things more disappointing than the realisation you could have made a dish better at home. At DW Eleven — 13, you'll never have this thought.

And then came the main course. If you know me, you know that I live and die for lamb. Served with a tower of potato slices, lemon confit, peas, anchovy, tomato, broad beans, mint and — the show-stopper — feta shavings with a delicate, crispy texture that melted in the mouth. The lamb was among the most tender and succulent I have ever tasted.

For the final act, enter the rich chocolate dessert served with flavourful, tart, blackcurrants, peanuts, raspberry and butterscotch. Dessert should only ever be ordered if it's worth all the extra calories. That's my philosophy, anyway. The beautiful balance of sweet and sour made my taste buds do a happy dance and it was definitely worth the calories.

A final note on the portions — despite the stereotype that fine dining means less food for more money, you will leave fully satisfied. You won't be stopping to grab a Big Mac after your date!

Wine

I have left my favourite part for last: the wine. Oh the wine, the wine, the wine. Each meal is expertly paired with a wine from DW Eleven — 13's excellent selection. Mario Monteiro is the wine executive, who ensures that the wines are the best quality and match each meal magnificently. They were so beautiful I could have dined on the wine alone!

We left having journeyed 'across the globe' through a rich culinary experience, all while sitting in a dining area feeling as if we were the only ones.

A year ago — give or take — I was wasting a lunch break stalking different figures on the Joburg food scene on Instagram. Little did I know that I was about to stumble on something big. On 13 November 2017, Gary Kyriacou, the business partner of Marble in Rosebank, posted a selfie with David Higgs, the brains behind Marble, wearing hard hats with the caption "And it all begins again". This set off a frantic series of events that eventually lead to someone spilling the beans: Gary and David were going to open a second restaurant. One month and one day later, Gary posted a teaser video revealing the name of the eatery — Saint — and that it would open in 2018.

Skip 10 months ahead and I found myself standing in one of the biggest restaurant and bar combos I've visited in SA. At 1 000m², Saint can seat 230 people, has a large DJ booth, and floor-to-ceiling windows overlooking Maude Street. Saint is based on the concept of Pazzo Italiano – loosely, the crazy Italian. It has quickly become the go-to pizza and champagne destination for Sandton’s trendy, up-and-coming business crowd.

Higgs and Kyriacou gained the original inspiration for Saint during their visit to New York in early 2016, as part of their planning and research for Marble. For David and Gary, the restaurant they went to in Manhattan had an unbelievable atmosphere. And, when clothing designer Alexander Wang walked in with a troop of models and started ordering pizza and champagne, they knew this was a combination they wanted to bring home with them.

After opening Marble, the team realised that Sandton held captive a great niche market for the idea. Beyond the food – because everyone eats and loves pizza – it was the right place for the vibe. In a city with energy, integration and positivity, Saint provides a much-needed, out-of-work experience.

In preparation for the opening of Saint, head chef Matt van Niekerk and chef de partie Tyler Clayton visited Milan, Italy, and worked alongside pizza masters Gino Sorbillo and Gennaro Rapido of Lievito Madre Sorbillo in Duomo Milan to learn the art of authentic Neopolitan pizza-making. Lievito Madre Sorbillo is a family-run restaurant, like many other authentic eateries in the city, and started rolling-out dough back in 1935, so pizza-making is a career. For Matt and Tyler, arriving at Gennaro’s Milan restaurant on a Monday morning was a welcome reward after a long journey from South Africa.

Saint’s pizza embodies this authenticity – imported flour, handmade local buffalo mozzarella and the freshest ingredients. Each pizza features a maximum of three to four toppings – unlike other local offerings. High standards and consistency are key – if a pizza isn’t the right size, right shape, has too much sauce or there isn’t a simplicity and balance of flavour, it doesn’t make the serve.

Toppings include fresh mozzarella; sirloin, caramelised onion and pumpkin seed pesto; cured meats with fresh tomato and taleggio cheese; and The Big Nacho with spicy jerked chicken, avocado, sour cream and cumin. There are also a few pizza Bianca (without tomato) options like the spinach, crème fraîche, Parmesan and fried egg; mushroom truffle, preserved lemon, Gorgonzola and asparagus; and salami, black olive, white anchovy, basil and mozzarella.

Saint gives people food they recognise and enjoy that's simple and beautiful, presented at an elevated level in a sophisticated setting. The two imported and custom-made Stefano Ferrara pizza ovens are the gold-mosaic centrepieces of the expansive kitchen. Standing amidst some of the finest equipment, chef skills and ingredients, they certainly fire-up Sandton’s culinary scene.

Dishes other than pizza include rigatoni pasta with either lamb or short rib; saffron risotto with osso bucco and gremolata; lamb shank and polenta; octopus casserole with chorizo, bean, kale and garlic; and wood-fired beets with mustard greens and beetroot pesto. For dessert, there is affogato, tiramisu, chocolate mousse, gelato and biscotti, and milkshakes.

In closing, Saint pays homage to Italian food while drenched with attention to detail. Although I wouldn't come to this eatery weekly, it's an excellent choice for special occasions and a Joburg bucket-list restaurant. Experience it for yourself at the base of the MARC building in Sandton.

Let's (happily) fall face first into the food, shall we? With most dishes made to boast rich, smokey flavours (a top food trend to watch out for in 2018  – Shawn called it!), the kitchen has its pulse on the international culinary world. Dishes include grilled pizzas, pastas, steaks and chicken skewered on swords. The restaurant also encourages sharing, where diners order a couple of plates for the table. The menu also features a range of traditional main dishes. For single diners, there is the option of dining at the bar upstairs... but more about that later.

At the top of the interior design and layout game, renowned Greek designer Alexandra Nicolou took it upon himself to turn The Rock Diner into a fashion-forward wonderland. The main restaurant seats up to 60 and is a moody mix of parquet wood floor, dark green marble, heavy wood panels, exposed brickwork, high-gloss black ceilings and high window frames. The outside courtyard has been given a facelift with a 3.5m olive tree, an ample amount of outdoor seating, custom-made tables and chairs and as a rustic gelato and pizza corner.

Two private dining areas include a wine room in which the vintages are the hero, and The Living Room with a live garden wall. The menu is an adventure in Greek, Japanese, Italian and American influences, which foodie Miles Kubheka was here to explore. The staircase is the backbone of this design, and it is impossible to resist seeing where it leads. The Carnelian Tapas Bar has a level of style and detail you would expect from a Hollywood set designer – which is thanks to Tarryn Fisher.

The answer to a tapas lover's sweatiest dream can be found on the second floor of The Rock Diner. Carnelian serves small shareable plates that have been cooked and constructed so well that it'd make the most popular Instagrammers blush.
