Scoop small portions of the butternut mac and cheese mixture into a greased muffin pan and sprinkle the tops with extra cheese or bread crumbs. Bake in the oven for 20 minutes or until the cheese has melted.
Tip: If your mixture is too runny, beat up an egg and add it to the mac and cheese. This will help solidify your cheesy cupcakes bites.

Checkers launched their meal kits not too long ago. These boxes include a recipe and all the main ingredients needed to make a delicious meal. Pantry ingredients like salt, pepper, water and oil, among others, will be needed for most of the meals. Each week there are several options to choose from including a meat, chicken, fish and vegetarian option. These kits range in price and cooking times. The wide variety of meals makes meal prep and healthy eating much easier.
Woolworths has been a convenient place to shop for quick and easy meals for as long as we can remember. They have always offered hot and tasty pies, yummy microwave meals, pre-made pasta, sandwiches at the ready and delicious rotisserie chicken. The latest of these offerings are their meal kits. Naturally, these are a little more pricey than Checkers, but many a consumer are happy to pay for the Woolworths brand. These kits also include all the necessary ingredients, except common pantry items, and a recipe for choices like Hake Korma, Rib-eye Steak, Mushroom and Pearl Barley and Spanish Chicken and Chorizo.
UCOOK offers 12 menu options a week, which are based on seasonal ingredients. They deliver all the items needed for these meals as well as the recipes. Their kits are divided into three categories, Health Nut, Vegetarian and Easy Peasy. You can choose how many meal kits you want, how many people you want to feed and which day of the week the kit gets delivered. Menu items include dishes like risotto, soup, tacos and curries.
Daily Dish offers a weekly meal kit which includes ingredients for your choice of three or four meals. You can choose which meals you want for the week, out of their 20 options and you can choose to feed between one, two or four people. Menus include Classic, Family, Banting, Vegetarian and Pork-free dishes. All the ingredients, except pantry items, are delivered to your door in thermally cooled boxes, which they will happily recycle for you.
This company offers meal kits that feed your choice of two or four people. Each kit contains three meals per person, available in either Classic, Pork-free, Foodie or Wholesome dishes. Before you choose a meal, you can see what ingredients are used and what ingredients you'll need from your pantry, as well as how long it will take to prepare and the level of spice.
DayToDay offers cooler boxes, which are recyclable, containing everything you need to prepare four healthy meals a week. The meals cater to people who are carb conscious, fitness fanatics and don't eat pork. There is also an Express option, containing meal kits that take 30 minutes or less to prepare. And they have lunch sorted for parents, kids and working professionals.
In recent years, Modderfontein has grown from the once small mining town into a flourishing suburb. It now boasts a nature reserve, shopping centre and a plethora of recreational activities ranging from museums to tree climbing.
The Flamingo Shopping Centre is the latest development in Modderfontein. What was once the Post Office on High Street has become a C-shaped block of shops, offering the locals the ease and convenience of nearby grocery stores, gift stores, clothing outlets and restaurants.
The most convenient of these shops is the Checkers. One may think that Checkers is not worth boasting about, but this particular branch exudes a feel reminiscent of a deli rather than South Africa's leading supermarket chain. This is because they have a diverse cheese and cold meat section, styled in tones of beige and black. Their produce section offers some interesting items that are hard to come by in regular grocery stores. And the rest of the shop offers all the satisfaction of a regular supermarket, including the great Checkers' specials and products that are harder to find at other branches.
Gift shopping will be a breeze as this centre has several boutique shops, florists, gift shops and a quirky stationery store that stocks bounds of trinkets for any occasion. They also have an interesting toy shop for the little ones. Or try the art gallery to gift the art enthusiasts in your life.
Other stores that have been added include beauty salons, spas, pet shops, biltong shops, printing shops and a cell phone store. And they have ATMs for all the major banks. All-in-all, shopping here is a dream. And the odd shape of the building has provided ample parking for shoppers and diners visiting the centre.
Last but certainly not least, to the locals anyway, are the plentiful restaurants offering a multitude of cuisines for every palate. Flamingo has a multitude of restaurants, from Greek and Italian to Lebanese and Indian. They even have a restaurant that caters for vegans and vegetarians.
The construction of the shopping centre has impacted the rest of the area as well. The roads have been renovated to remove all the traffic circles and robots have been installed in their place. The local garage has also been renovated and built-up. The project will continue by bringing in new life into the wetlands and dam in Modderfontein. There are also plans for a secure community park to be developed to take this suburb into the next era.
Woolworths has recently launched their new plant-based food range among its many branches across Joburg. Their new range includes a diverse selection of items, such as cheese, milk and meat alternatives. Their cheese range is made out of coconut oil and is soya-free. It has Greek style cheese, cream cheese, cheddar and cheese spread. Woolworths also has a healthy choice of vegan milks, such as almond, coconut and rice, coconut, soya and rice milks. Their meat alternatives are extensive, from burger patties made from vegetables to sandwich slices made from pea protein. And their vegan biltong, made from mushrooms, is certainly worth mentioning. These dried morsels taste like a chewy and slightly bitter version of the real thing. Woolies also has a few of their delicious pre-made snacks and meals in vegan options as well as pre-made vegan jelly.
Spar stocks the widest variety of South Africa's own vegan brand, Fry's. Here, vegans can get some delicious and affordable burger patties, schnitzels, nuggets, sausages, polony, sausage rolls and pies. They also have a Crafted range, featuring butternut balls, falafels and a country roast. Certain branches of Spar, such as the Craighall Park and Broadacres branches, also stock various vegan ice cream, salad dressing, sandwiches, Meraki products and tofu. This is a good retailer to browse through and catch some interesting finds. If that wasn't enough, Spar has now launched their own range of vegan and vegetarian goodies, called Simply Veg. Give their vegan nuggets a try, these are free from onion, garlic, dairy and egg.
PnP offers all the same Fry's products as Spar, but they also sell Quorn. Quorn is a meat substitute made from mycoprotein, a plant-based fungus. Products under this range include bacon, chicken-style pieces and fillets, sausages and burger patties, among others. They have a vegetarian range as well as a vegan range, both of which taste the same with the vegan option having a softer texture. Be sure to look out for the vegan label on the bag to make sure you don't receive a product that contains dairy or eggs. This is, in our option, the best tasting and textured of the meat alternatives. Pick n Pay also sells a fair range of vegan milks, such as almond and soy. To boot, PnP now offers shoppers delicious and affordable vegan items as part of their Pick n Pay Livewell range.
Checkers stocks both Quorn and Fry's products. But they also stock the popular British range, Linda McCartney. Named for the Beatles' Paul McCartney's late wife, this range produces vegetarian and vegan products. Again, it's important to check your labels to make sure the products are vegan. They have sausages, burgers and pies among their range. These products have a more meaty taste than its competitors, so it's perfect for those new to the vegan lifestyle or who are still adjusting. Checkers also have their Simple Truth range, which has many vegan products, including milk, pasta, pizza, burger patties, pre-made meals and snacks.
This grocer sells many vegan options, aside from all the fruit and vegetables, that is. They sell bags of soya mince, just soak in hot water or stock for 15 minutes then use like regular mince. They also have vegan mayonnaise and vegan milk alternatives, such as Almond Breeze. Recently, they became a stockist for Tofutti, dairy-free imitation cheese. But what makes this store worth stopping at is their Almond Creamery, a brand of flavoured vegan drinking milk.
We all know Dischem as our favourite pharmacy and health store. But they also sell some interesting and delicious vegan products. Dischem stocks all types of vegan milks and even vegan milk powder. They also sell Violife cheese and cold sandwich cuts. Best of all, they provide vegan jelly sachets and chocolate. You can find a wide variety of dressings, sauces, condensed milk and even plant-based protein for the gym bunnies.

For quite some time Salvation Cafe has been the go-to brunch spot for locals in and around Milpark. As one of 44 Stanley's most popular tenants, Salvation Cafe offers an authentic cafe experience one would find along the French Riviera during springtime. And what better way to soak up the sun at the edge of Africa than with a hearty dose of pancakes? Choose between classic pancakes glittered with cinnamon sugar, fresh lemon juice and syrup, or island it up with a Caribbean-inspired flatty topped with fresh fruit, a berry coulis, syrup and yogurt.
A pancake by any other name is still a pancake... but if you want to be linguistically correct without stepping on any French toes, head to Arbour Cafe in Birdhaven to get your crepe on. Options range from the simple sugar, cinnamon, lemon juice and syrup entry to the more complex brandy flambéed orange butter sauce crepe. Our favourite would be the Nutella and banana rendition for sure. Wash this down with one of the many teas Arbour Cafe has on offer.
You know you're in for a treat when you sit down in a coffee shop that reminds you of your cultured aunt's kitchen. The perfect Cup in Parkview has become a home away from home for many Joburg residents... and with the homeliness comes pancakes, of course. With four sweet and three savoury options to choose from, there's something for every mood imaginable (as if we need an excuse to stuff our faces with the fluffiest and most delicate pancakes in Joburg). The menu sings songs of apples and cream, peppermint chocolate and ice cream, and mince, chicken and tuna fillings.
With by far the biggest variety of pancakes on this list of top pancakes in Joburg, De Molen is a Dutch bakery and restaurant hidden inside a windmill in Edenvale. Far from the beautiful and heritage-rich streets of Holland, De Molen offers items such as savoury bacon and cheese, chicken mayo stuffed pancakes or cherries and cream, and Dutch apple and cinnamon pancakes, to name a few. The coffee is also good, the vibe great, and the rest of the menu just as delicious. De Molen truly serves the best pancakes in Joburg even though these are a tad thicker than we're used to.
Pick-a-Pancake is a family restaurant with an endearing cow theme, and they specialises in meal-size pancakes with savoury or sweet fillings. The menu is not limited to pancakes, however, as they also serve a variety of meals such as breakfasts, tramezzini, salads, chips, etc... but we're here to talk about pancakes! Patrons can expect an interesting combination of diner-style fillings such as an English breakfast pancake complete with egg, roasted tomato, caramelised onion and bacon.

For years - if not decades - we've been nibbling our way through Saturday morning grocery shopping on the most amazing, plain Jane pancakes under the African sun. On most days, especially over weekends, Checkers stores across Gauteng roll out the old gas stove and a big jar of pancake batter and get cracking. The price per pancake is quite low and toppings are strictly limited to the old-school cinnamon sugar and lemon juice – which is sometimes exactly what you're craving.
