Lockdown Lowdown With Haseena From The Daily Dilemna

Haseena from The Daily Dilemna is who we call a super mom, she’s an occupational therapist who has a massive love for food. She’s been trying out new recipes and sharing some food recipes with her followers. We caught up with her to find out about her lockdown lowdown.

What is the first thing you’ll get up to once lockdown is over? 

I think the first thing I’d do after lockdown is take a road trip to visit my family in the coast… it’s been too long and the children are probably having the worst experience right now, because as adults we have had the chance to pop out to the stores and see the outside world. But my kiddies have been home for almost six weeks now! So definitely taking them out somewhere they would enjoy once this is all done.

Which restaurant do you miss the most? 

I was thinking about this the other day, and figured out what I’d want to eat right now and I think it would be a scrumptious RocoMamas burger and chili cheese fries and a freak shake and waffle, and, and, and… So yes I think RocoMamas is what I miss most!

What’s your favourite home-cooked meal you’ve made during lockdown? 

I’ve been experimenting with so many recipes during the lockdown, I would say my favourite home-cooked meal is a South African Indian specialty known as Khuri Kitchri (I have shared the recipe on my page).

At the same time, I must say the most popular recipe I have made and shared on my page is homemade Cinnabon’s! (it’s been trending and so many say it’s even better than the original). A few other popular copycat recipes I have shared include a Spur Cheddar Melt Steak recipe, chicken tikka and also some homemade donuts. Yes, I’ve spent a lot of time in the kitchen… haven’t we all?

What are you watching on Netflix? 

I’ve just completed rewatching the entire five seasons of Prison Break (an old favourite series and I totally recommend it!) Also, keeping up with Dynasty. Have also started watching Money Heist.

We had nothing to have with our afternoon cup of tea and coffee so I decided to be brave and make some biscuits!!☺️🙈. Those that have been following me for a while know that the one thing I do not do, is make biscuits!! I think I’ve always thought it to be a lot of work and I’ve never been confident making them!! My mom and mom in law are the biscuit queens so I’ve never really attempted biscuits☺️. So, yes, it’s a year of firsts, and for the first time I made some smartie biscuits😍. We made half the dough into the pretty nozzles biscuits like my mom makes, and the other half of the dough hubby and the kids got involved and made these pretty round cookie cutter biscuits (swipe to see how pretty they are 😍). Also I have to be honest, I don’t own a large biscuit piping nozzle and using an icing 1M to try and pipe these biscuits was taking way too long 😜. Have to say though, they’re pretty easy to make (yes!😱) and they were so good fresh out of the oven 😍 So guys, I know you’re all waiting to make some smartie biscuits this weekend.. perfect in this cold rainy weather we are experiencing!! 😉. So here’s my moms recipe.. and I’ll add a few step by step pics to my instastories 😊 Smartie Biscuits @the_daily_dilemna 1/2 lb butter 1 cup icing sugar 1 cup maizena ( corn starch) +/- 3 cups flour 1/2 cup oil Mix butter, icing sugar and maizena in stand mixer. Add oil and mix again. Add about 2 cup of flour and mix. Remove bowl from stand and at this point start adding f a little flour at a time to form a soft dough. Dough should come together well and should be soft enough to pipe through a nozzle. Pipe into desired shape using a nozzle. Decorate with smarties. Bake at 170 degrees Celsius until done. Have you picked up a hobby or perfected a skill? 

I have inadvertently become a teacher (with online schooling for the kids), also started spending more time in my garden and have realised that I now need to keep up with cleaning and laundry. I’ve learnt that I enjoy hanging washing. But mostly I’ve been perfecting my cooking and baking skills!

What are the three staples in your kitchen right now? 

Flour, eggs and yoghurt (you may have seen the popular two ingredient dough).

I hope everyone is having a lovely Friday, the last Jummah before Ramadaan begins for us here in South Africa Alhumdulillah ❤️ I know you’re probably all done with making pies and Ramadaan preps (right?☺️) but I had to share this with you guys, inshallah you can make it during Ramadaan. I’m not one to experiment with pastry, I’m usually hesitant but this lockdown has done things to us all😂. So, I had a piece of puff pastry left over after making those delicious cream pastry’s the other day (if you haven’t tried those btw, you have to soon!!) and I remembered that I had some left over steak in the freezer. I decided to improvise and make some steak pies. One of my lovely followers had sent me this picture of how to fold the pie like this and I was fascinated… not sure if I would try it, but I saved the picture. So when I saw the left over steak and the piece of puff pastry I thought let me give it a try!! (Not sure at this point, how it would turn out!!☺️🙈. Well, Alhumdulillah they turned out so beautiful masha’allah and I had to share with you guys so you can make them too and wow your family 😍❤️. Coffee or tea? 

Coffee (always!) but what I wouldn’t do for a Starbucks right now… I’m so tired of making my own coffee.

Just popping by to share this delicious dessert with you guys☺️. This is a Ramadaan speciality in many homes in South Africa, and I grew up having it and now make it for my family 💕. It’s called “phirni” and it’s a very simple dessert made with semolina. Are you a phirni fan?☺️. You can see my Instastory for a few step by step pics… my little one was helping me and was trying to convince me to make it blue 🤣🙈 I’ll leave the recipe here for you.. please note I did half the recipe this time. I’m off to get Iftaar prepared, I think it’s the perfect weather for some hot hot (yes always say it twice😜) bhajia!! Phirni @the_daily_dilemna Based on the recipe in The New Food with Flair 4 Tblsp Tastee Wheat 4 Tblsp Condensed Millk 4 Cups Milk 2 tsp badaam mix (I make this for our Ramadaan milk- almonds, pista, pecan and elachi ground together) A few drops pink or green coloring 155g Nestle Cream Method: Make a paste with half cup milk and the Tastee Wheat. Bring rest of milk to boil. Add paste to milk and stir until thickens. Add condensed Milk and ground almonds. Remove from heat and cool completely. What are you currently most grateful for? 

I’m so grateful for the roof over my head, a warm and loving home environment, the food on my table and the clothes on our bodies. There are so many people out there who do not have basic necessities, my heart and prayers goes out to them during this difficult time. Also, I’m very grateful for my faith, and knowing that everything that’s happening right now will pass and that better days will come.

How do you keep yourself going and motivated during this time?

Prayer, routine, cooking and baking, exercise and some fresh air in the garden. Also, endless FaceTime calls to my family.
