Healthy Ostrich Burger

Serves 4


You will need
4 Ostrich patties
8 Slices rye bread
1 Tbls Olive oil
1 Clove garlic, whole
4 Radishes, finely sliced
1 Cucumber, sliced into ribbons
1 Cup white wine or rice vinegar
2 Tbls Sugar
1 tsp Salt
1 Packet fresh rocket leaves, rinsed
Black Pepper to season

How to make it
Mix the vinegar, sugar and salt together. Add the cucumber ribbons and marinade for at least 10 minutes.
Pre-heat a griddle pan to very hot. Brush the rye slices with some olive oil and rub with the garlic clove to impart some garlic flavour.
Grill the slices until they become golden brown and griddle marks are clear – do this on both sides. Set aside.
Cook the Ostrich patties in a pan, on the griddle pan or over and open fire – which ever you prefer. Cook until just done, too well done and they will become dry.
Build the burger by layering the rocket, ostrich patty, marinated cucumber and then the radishes. Season with black pepper and serve immediately.
Serve with a side salad and grilled sweet potato wedges if you wish.

• You can buy Ostrich products from most supermarkets and butcheries.
• Slice the cucumber into ribbons with a peeler.
• Spice it up with sliced fresh green chillies.
